- 8 oz spaghetti
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 cup bell peppers (mixed colors), sliced
- 1/4 cup red onion, finely chopped
- 1/2 cup Italian dressing (store-bought or homemade)
- 1/2 cup feta cheese, crumbled
- 2 tbsp fresh basil or parsley, chopped
Instructions
- Cook spaghetti in salted water according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion.
- In a large mixing bowl, combine cooled spaghetti with chopped veggies.
- Drizzle Italian dressing over the salad and toss well to coat.
- Add crumbled feta cheese and fresh herbs; gently fold to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
