- 1 whole chicken (4–5 pounds)
- 2 fresh lemons (zested and juiced)
- 4 garlic cloves (minced)
- 3 tablespoons olive oil
- 2 teaspoons fresh rosemary (chopped)
- 2 teaspoons fresh thyme (chopped)
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the oven to 425°F (220°C) and prepare a lined roasting pan.
- Pat the chicken dry with paper towels and season generously with salt and pepper.
- In a bowl, mix minced garlic, chopped herbs, lemon zest, and olive oil. Rub this mixture all over the chicken.
- Halve one lemon and place it inside the chicken cavity along with extra herb sprigs.
- Roast for approximately 1 hour and 15 minutes until golden brown or until the internal temperature reaches at least 165°F (75°C).
- Allow the chicken to rest for 10 minutes before carving.
