- 1/2 cup unsalted butter (room temperature)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1 cup coconut flakes (sweetened or unsweetened)
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and mix well.
- In a separate bowl, whisk together the flour, baking powder, and lemon zest. Gradually combine this dry mixture with the creamed mixture.
- Stir in the fresh lemon juice and coconut flakes until evenly mixed.
- Drop rounded portions of dough onto prepared baking sheets, spacing them about two inches apart. Bake for 10–12 minutes or until lightly golden around the edges.
- Allow cookies to cool on the baking sheet for five minutes before transferring them to wire racks.
