- 1 can (15 oz) chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro or parsley, chopped
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse the chickpeas under cold water until clean.
- Dice the avocado into bite-sized pieces.
- Slice cherry tomatoes in half and chop cucumber into small cubes.
- In a large mixing bowl, combine chickpeas, avocado, tomatoes, cucumber, red onion, and herbs.
- Drizzle lemon juice and olive oil over the salad; season with salt and pepper. Gently toss to combine.
- Taste and adjust seasoning if necessary before serving.
