- 2 ripe avocados (diced)
- 1 can (15 oz) black beans (rinsed and drained)
- 1 cup cherry tomatoes (halved)

- 1/4 cup fresh cilantro (chopped)

- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse the black beans under cold water and set aside.
- In a large bowl, combine diced avocados, black beans, halved cherry tomatoes, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad mixture and gently toss to combine without mashing the avocado.
- Chill in the refrigerator for 15-30 minutes before serving for best flavor.
- Serve alone or with tortilla chips.
