- 1 cup green or brown lentils
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 large carrots, diced
- 2 celery stalks, sliced
- 4 cups low-sodium vegetable broth
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until fragrant and translucent (about 5 minutes).
- Add diced carrots and sliced celery; stir for another 5 minutes until slightly softened.
- Incorporate rinsed lentils along with dried thyme and bay leaves; mix well.
- Pour in vegetable broth and bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes until lentils are tender.
- Season with salt and pepper to taste. Remove bay leaves before serving.
