Ingredients

  • 2 cups cooked pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (mixed colors), diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh basil, chopped
  • Salt & pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water until cool.
  2. While the pasta cooks, dice the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
  3. In a small bowl, whisk together olive oil and balsamic vinegar; season with salt and pepper.
  4. In a large bowl, combine cooled pasta with chopped vegetables and feta cheese. Pour dressing over the salad and mix gently.
  5. Fold in fresh basil before serving.
