- 1 can black beans (15 oz), drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup whole wheat breadcrumbs
- 1/2 cup finely chopped carrots
- 1/2 cup finely chopped bell peppers
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil (for cooking)
Instructions
- Rinse quinoa under cold water, then combine with 2 cups of water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until the water is absorbed. Fluff with a fork and let cool.
- In a large bowl, mash the black beans until mostly smooth but still chunky.
- Add cooled quinoa, chopped vegetables, cumin, and smoked paprika to the mashed beans; mix well.
- Stir in breadcrumbs until the mixture holds together. Form into patties about ½ inch thick.
- Heat olive oil in a skillet over medium-high heat; cook each patty for about 5 minutes per side until golden brown.
- Serve warm with your favorite toppings.
