Ingredients

Scale
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup whole wheat breadcrumbs
  • 1/2 cup finely chopped carrots
  • 1/2 cup finely chopped bell peppers
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil (for cooking)

  2. In a large bowl, mash the black beans until mostly smooth but still chunky.
  3. Add cooled quinoa, chopped vegetables, cumin, and smoked paprika to the mashed beans; mix well.
  4. Stir in breadcrumbs until the mixture holds together. Form into patties about ½ inch thick.
  5. Heat olive oil in a skillet over medium-high heat; cook each patty for about 5 minutes per side until golden brown.
  6. Serve warm with your favorite toppings.
