- 2 lbs beef chuck roast
- 4 cups beef broth
- 4 French rolls
- 1 large onion, sliced
- 6 slices Swiss cheese
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Season the beef chuck roast with salt, pepper, garlic powder, and thyme. Heat oil in a skillet over medium-high heat and sear each side until browned.
- Transfer the roast to a slow cooker or Dutch oven and pour in the beef broth. Cook on low for about 8 hours or until fork-tender.
- In a separate skillet, melt butter over medium heat and caramelize the sliced onions until golden brown (about 15 minutes).
- Preheat the oven to broil. Slice open the French rolls, place them on a baking sheet, add Swiss cheese on top, and broil for about 2 minutes until bubbly.
- Shred or slice the cooked beef and pile it high on the cheesy rolls topped with caramelized onions.
- Serve hot with bowls of warm au jus for dipping.
