- 3–4 boneless, skinless chicken breasts
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme (or fresh if available)
- 2 bay leaves
- Salt and pepper to taste
- 1 cup frozen peas
- 2 tbsp lemon juice
Instructions
- Prep your ingredients by washing and chopping the vegetables.
- Place chicken breasts at the bottom of the crockpot and cover with chicken broth.
- Add chopped carrots, celery, onion, garlic, thyme, bay leaves, salt, and pepper on top of the chicken. Stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken using two forks and return it to the pot.
- Stir in frozen peas and lemon juice; let simmer on low for an additional 10 minutes before serving.
