  • 34 boneless, skinless chicken breasts
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme (or fresh if available)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 tbsp lemon juice

Instructions

  1. Prep your ingredients by washing and chopping the vegetables.
  2. Place chicken breasts at the bottom of the crockpot and cover with chicken broth.
  3. Add chopped carrots, celery, onion, garlic, thyme, bay leaves, salt, and pepper on top of the chicken. Stir gently to combine.
