- 3–4 boneless, skinless chicken breasts
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream (or half-and-half)
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Gather and chop all ingredients into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-5 minutes).
- Add diced carrots and celery; cook until softened (5-7 minutes).
- Stir in chicken breasts and chicken broth; bring to a gentle simmer for about 20 minutes until the chicken is cooked through.
- Remove chicken, shred it with two forks, and return it to the pot along with heavy cream and dried thyme.
- Season with salt and pepper to taste before serving.
