- 4 boneless, skinless chicken breasts (about 1 lb)
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 large sweet onion, sliced
- 8 oz provolone cheese, sliced
- 2 tsp Italian seasoning
- 4 hoagie rolls
Instructions
- Prepare your ingredients by washing and slicing the bell peppers and onion into thin strips.
- In a large skillet over medium-high heat, add 2 tsp olive oil. Cook the seasoned chicken breasts for about 5-7 minutes until golden brown.
- Add the sliced bell peppers and onions to the skillet; sauté until softened (about 5 minutes).
- Layer provolone cheese over the chicken mixture and cover with a lid until melted.
- Slice hoagie rolls open and fill generously with the cheesy chicken mixture. Serve immediately.
