- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups low-sodium chicken broth
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, diced
- 1 can (16 oz) biscuit dough
- Salt to taste
- Pepper to taste
- 1 tsp fresh thyme or parsley
Instructions
- Dice the carrots, celery, and onion. Heat olive oil in a large pot over medium heat and sauté the onions until translucent.
- Add the diced chicken, carrots, and celery to the pot. Pour in enough chicken broth to cover the mixture and bring to a gentle boil.
- Reduce heat and let it simmer for about 20 minutes.
- While simmering, prepare biscuit dough according to package instructions.
- Drop spoonfuls of biscuit dough on top of the simmering mixture. Cover tightly and cook for an additional 15 minutes until fluffy.
