- 1 pound lean ground beef
- 1 cup uncooked long-grain white rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded sharp cheddar cheese
- 1 can (14.5 oz) diced tomatoes (with juice)
- 2 cups beef broth
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, brown the ground beef with diced onions and minced garlic until no longer pink (about 5-7 minutes). Drain excess fat.
- In a bowl, mix the browned beef mixture with uncooked rice, diced tomatoes (including juice), beef broth, salt, and pepper until well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle shredded cheddar cheese on top.
- Cover with aluminum foil (not tightly sealed) and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
