- 4–6 large eggs
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 1 cup bell peppers, chopped
- 1/2 cup onion, chopped
- 4 large flour tortillas
- Salsa to taste
- Fresh cilantro (optional)
Instructions
- Gather all ingredients and chop bell peppers and onions.
- Whisk eggs in a bowl. Heat oil in a skillet over medium heat and scramble the eggs until fluffy.
- In another skillet, sauté chopped onions and bell peppers until soft, about 5 minutes.
- Mix scrambled eggs with sautéed veggies and shredded cheese until melted.
- Place egg mixture on one side of a tortilla. Fold in the sides and roll tightly from bottom to top.
- Place seam-side down on a skillet over medium heat for 2-3 minutes per side until golden brown.
