  • 46 large eggs
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1 cup bell peppers, chopped
  • 1/2 cup onion, chopped
  • 4 large flour tortillas
  • Salsa to taste
  • Fresh cilantro (optional)

Instructions

  1. Gather all ingredients and chop bell peppers and onions.
  2. Whisk eggs in a bowl. Heat oil in a skillet over medium heat and scramble the eggs until fluffy.
  3. In another skillet, sauté chopped onions and bell peppers until soft, about 5 minutes.
  4. Mix scrambled eggs with sautéed veggies and shredded cheese until melted.
  5. Place egg mixture on one side of a tortilla. Fold in the sides and roll tightly from bottom to top.
  6. Place seam-side down on a skillet over medium heat for 2-3 minutes per side until golden brown.
