- 1 lb boneless, skinless chicken thighs
- 2 tbsp taco seasoning
- 8 small corn or flour tortillas
- 1/2 cup fresh cilantro, chopped
- 2 limes, cut into wedges
- 1/2 cup Greek yogurt or sour cream
- 1/2 cup salsa (mild or spicy)
Instructions
- Preheat your grill to medium-high heat.
- In a mixing bowl, combine taco seasoning, 2 tbsp olive oil, and juice from one lime. Add chicken thighs and marinate for at least 30 minutes.
- Grill marinated chicken for 5-7 minutes per side until fully cooked (165°F/75°C).
- Warm tortillas on the grill for about 1 minute per side until soft.
- Slice grilled chicken into bite-sized pieces and assemble tacos by placing chicken in tortillas. Top with cilantro, salsa, and a dollop of Greek yogurt or sour cream.
- Serve with lime wedges for squeezing on top before enjoying.
