Ingredients

Instructions

  1. Peel and dice sweet potatoes into half-inch cubes. Chop onion and bell pepper.
  2. Heat olive oil in a large skillet over medium heat. Sauté sweet potatoes until golden brown, about 10 minutes.
  3. Add chopped onion and bell pepper; cook until the onion is translucent, about 5 minutes.
  4. Stir in minced garlic and add spinach or kale. Cook until wilted, about 1 minute.
  5. Season with paprika, salt, and pepper to taste. For added richness, crack eggs on top, cover, and cook until desired doneness, 5-7 minutes.
