- 3 boneless skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese (full-fat)
- 2 cups fresh spinach
- 1 can (14.5 oz) diced tomatoes
- 2 tsp Italian seasoning
- 1 cup small pasta shapes (optional)
Instructions
- Chop chicken into bite-sized pieces and mince garlic.
- In a large pot, heat 2 tbsp olive oil over medium heat. Add chicken and cook until golden brown, about 6-7 minutes. Stir in minced garlic and sauté for an additional 30 seconds.
- Pour in the chicken broth and add diced tomatoes; bring to a gentle boil.
- Reduce heat to low, add cream cheese, and stir until melted.
- Stir in fresh spinach and Italian seasoning; simmer for about 2-3 minutes until spinach wilts.
- If using pasta, add it now and cook according to package instructions until tender.
- Serve hot with freshly grated Parmesan cheese if desired.
