- 2 cups fresh spinach (washed and coarsely chopped)
- 1 cup crumbled feta cheese
- 6 large eggs
- 1 medium onion (finely chopped)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 2 tbsp fresh herbs (dill or parsley) (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions until translucent, about 3 minutes.
- Add spinach to the skillet and cook until wilted.
- In a bowl, whisk together eggs, salt, and pepper. Stir in crumbled feta.
- Pour the egg mixture over the sautéed vegetables. Cook on medium heat until edges begin to set, about 5 minutes.
- Transfer the skillet to the oven and bake for approximately 15 minutes until golden brown.
