- 1 lb boneless chicken thighs
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 cup panko breadcrumbs
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1/2 cup mayonnaise
- 2 tbsp Sriracha sauce
Instructions
- Marinate chicken thighs with cayenne pepper, paprika, salt, and pepper for at least 30 minutes.
- Combine flour and cornstarch in one bowl; place panko breadcrumbs in another.
- Dredge marinated chicken first in the flour mixture, then coat with panko breadcrumbs.
- Heat oil in a skillet to 350°F (175°C) and fry chicken for about 5 minutes on each side until golden brown.
- Assemble the burger with toasted buns, spicy mayo, lettuce, and tomato.
