- 1 cup heavy cream
- 4 cups low-sodium chicken or vegetable broth
- 2 green onions, sliced (for garnish)
Instructions
- Prep Your Veggies: Peel and dice the Yukon Gold potatoes into bite-sized pieces. Finely chop the onion, celery, and bell pepper.
- Sauté Aromatics: In a large pot over medium heat, melt butter or heat oil. Add onion, celery, and bell pepper; sauté until soft (about 5 minutes).

- Incorporate Potatoes & Broth: Add diced potatoes and pour in the broth. Bring to a gentle boil before reducing heat to simmer for about 10 minutes.
- Stir in Cream: Once potatoes are tender, stir in heavy cream and simmer for another 10 minutes to meld flavors.
- Taste & Adjust: Before serving, taste the soup and adjust seasonings as needed.
