- 8 oz penne pasta
- 12 oz smoked sausage (Andouille recommended)
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 bell pepper, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
- Fresh parsley (optional)
Instructions
- Prepare ingredients by chopping bell peppers, onions, and garlic.
- Cook the penne pasta in salted boiling water until al dente (8-10 minutes). Drain and set aside.
- In a large skillet over medium heat, sauté chopped onions and bell peppers in olive oil for about 5 minutes until soft.
- Add sliced sausage and minced garlic; cook until the sausage is browned (4-5 minutes).
- Pour in heavy cream and chicken broth; let simmer for 5 minutes until slightly thickened.
- Stir in Cajun seasoning and cooked pasta; toss to coat evenly.
- Mix in grated Parmesan cheese before serving.
