- 1 can (15 oz) canned black beans, rinsed and drained
- 4 small flour or corn tortillas
- 1/4 cup fresh cilantro, chopped
- 1 ripe avocado, diced
- 1 lime, juiced
- 1 tsp cumin
- 1 tsp chili powder
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tsp olive oil
Instructions
- Rinse and drain the black beans.
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic and cook for an additional 30 seconds.
- Stir in the black beans, cumin, and chili powder. Cook for about 5 minutes until heated through.
- Warm tortillas in a separate pan or oven (350°F/175°C) for about 10 minutes.
- Assemble tacos by placing the bean mixture on each tortilla and topping with avocado, cilantro, and lime juice.
- Serve immediately while warm.
