- 2 red snapper fillets (approx. 6 oz each)
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tbsp fresh herbs (parsley or cilantro), chopped
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking tray with olive oil.
- Pat dry the red snapper fillets with paper towels for optimal crispiness.
- In a bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper. Coat both sides of each fillet with this mixture.
- Place the seasoned fillets skin-side down on the baking tray and bake for 15-20 minutes or until the fish flakes easily with a fork.
- After baking, drizzle with additional lemon juice and sprinkle chopped herbs on top before serving.
