- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, room temperature
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
- 2 cups heavy whipping cream
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- In a bowl, whisk together flour, baking powder, and a pinch of salt.
- In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Gradually add dry ingredients alternately with milk until just combined.
- Divide batter between prepared pans and bake for 25-30 minutes or until golden brown. Cool completely on wire racks.
- Whip heavy cream until stiff peaks form. Layer whipped cream between cake layers and top with strawberries on one side and blueberries on the other.
