- 1 lb ground lamb or beef
- 1 cup diced onions
- 1 cup chopped carrots
- 1 cup frozen peas
- 2–3 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 cups mashed potatoes (homemade or store-bought)
- 1 cup grated cheddar cheese
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet over medium heat, sauté onions in oil until translucent. Add carrots and garlic; cook until softened.
- Stir in ground meat; cook until browned, about 5-7 minutes.
- Pour in beef broth and add frozen peas, seasoning with salt and pepper; simmer for 10 minutes until slightly thickened.
- Mix butter and cheese into mashed potatoes for creaminess.
- Spread meat mixture in an oven-safe dish, top with mashed potatoes, create texture with a fork, sprinkle more cheese on top.
- Bake for 25-30 minutes or until golden brown.
