- 1 lb 80/20 ground beef
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1 medium yellow onion, finely chopped
- 1/2 cup ketchup (divided)
- 1/4 cup brown sugar
- 1 tbsp mustard
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onion, and half of the ketchup; mix until just combined.
- Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
- In a small bowl, mix remaining ketchup, brown sugar, and mustard; spread over the meatloaf.
- Bake for about 60 minutes or until the internal temperature reaches 160°F (70°C).
- Let rest for 10 minutes before slicing.
