- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 2 tbsp taco seasoning
- 1 cup bell peppers, sliced (any color)
- 8 corn or flour tortillas
- Your favorite toppings (e.g., avocado, cilantro, cheese, salsa)
Instructions
- Gather and prepare all ingredients. Dice the onion and slice the bell peppers.
- (Optional) Sear chicken breasts in a skillet over medium-high heat for about 3-4 minutes per side until golden brown.
- Place the chicken in a crockpot and sprinkle taco seasoning over it. Add garlic and onion.
- Pour in the chicken broth and add sliced bell peppers.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily with forks.
- Shred the chicken directly in the pot; serve with warm tortillas and desired toppings.
