- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fresh cremini or button mushrooms, sliced
- 2 shallots, finely chopped
- 3 garlic cloves, minced
- 1 cup dry Marsala wine
- 1 cup low-sodium chicken broth
- 3 tbsp olive oil
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Gather and chop shallots and garlic.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; sear for 4-5 minutes per side until golden brown. Set aside.
- In the same skillet, add shallots and mushrooms; sauté for about 5 minutes until softened.
- Stir in minced garlic; cook for an additional minute.
- Pour in Marsala wine and chicken broth; scrape up any bits from the pan. Let simmer for about 5 minutes until slightly reduced.
- Return chicken to the skillet; cover and simmer gently for another 10 minutes until fully cooked.
- Stir in butter until melted before serving.
