- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped

- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook corn by boiling or grilling until tender; cool and cut off kernels.
- In a large bowl, combine diced avocados, cherry tomatoes, red onion, and cilantro.
- Add the corn to the bowl.
- Drizzle with lime juice and olive oil; season with salt and pepper.
- Gently toss all ingredients together without mashing the avocado.
- Serve immediately or chill for up to 30 minutes.
