Ingredients

  • 4 cups ripe mangoes (about 3 medium-sized)
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons fresh lime juice
  • Pinch of salt

Instructions

  1. Peel and cube the ripe mangoes until you have about 4 cups.
  2. In a blender, combine the mango cubes, coconut milk, and honey or maple syrup. Blend until smooth.
  3. Add the lime juice and pinch of salt; blend again until well combined.
  4. Pour the mixture into popsicle molds, leaving some space at the top for expansion.
  5. Insert sticks and freeze for at least 4 hours, or until solid.
  6. To serve, run warm water over the outside of the molds to release the popsicles.
