- 4 cups ripe mangoes (about 3 medium-sized)
- 1 cup full-fat coconut milk
- 2 tablespoons honey or maple syrup
- 2 tablespoons fresh lime juice
- Pinch of salt
Instructions
- Peel and cube the ripe mangoes until you have about 4 cups.
- In a blender, combine the mango cubes, coconut milk, and honey or maple syrup. Blend until smooth.
- Add the lime juice and pinch of salt; blend again until well combined.
- Pour the mixture into popsicle molds, leaving some space at the top for expansion.
- Insert sticks and freeze for at least 4 hours, or until solid.
- To serve, run warm water over the outside of the molds to release the popsicles.
