- 2 cups ripe tomatoes, diced
- 1 cup English cucumber, diced
- 1 small red onion, thinly sliced
- 1 cup bell peppers (any color), diced
- 1 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
Instructions
- Wash and chop the tomatoes, cucumber, and bell peppers into bite-sized pieces. Place in a large mixing bowl.
- Thinly slice the red onion and soak in cold water for about 10 minutes to mellow its flavor. Add to the bowl.
- Toss in the Kalamata olives and crumbled feta cheese.
- Drizzle with olive oil and lemon juice, then sprinkle with dried oregano. Gently toss until well combined.
- Serve immediately on a beautiful platter or in individual bowls.
