- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1/4 medium red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 2 tbsp fresh basil or parsley, chopped
- Salt and pepper to taste
Instructions
- Wash and prepare all vegetables by slicing cherry tomatoes in half, dicing cucumbers into bite-sized pieces, and thinly slicing the red onion.
- In a large bowl, combine the cherry tomatoes, cucumbers, and red onion.
- Gently fold in the crumbled feta cheese until evenly distributed.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently to coat evenly.
- Sprinkle fresh herbs on top and give it one last toss before serving.
