- 8 oz soba noodles
- 1 cup bell peppers, chopped
- 1 cup cucumbers, diced
- 4 green onions, finely chopped
- 3 tbsp toasted sesame oil
- 2 tbsp low-sodium soy sauce
- 2 tbsp unseasoned rice vinegar
- 1 tbsp honey or maple syrup
- 2 tbsp toasted sesame seeds
Instructions
- Cook the soba noodles according to package instructions until al dente (about 4-5 minutes). Drain and rinse under cold water.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey or maple syrup until well combined.
- In a large bowl, combine the chopped bell peppers, cucumbers, and green onions.
- Add the cooled soba noodles to the veggies and pour the dressing over the top. Toss gently until everything is evenly coated.
- Transfer to serving bowls and sprinkle with toasted sesame seeds. Serve chilled or at room temperature.
