  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, diced
  • 4 green onions, finely chopped
  • 3 tbsp toasted sesame oil
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 tbsp toasted sesame seeds

Instructions

  1. Cook the soba noodles according to package instructions until al dente (about 4-5 minutes). Drain and rinse under cold water.
  2. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey or maple syrup until well combined.
  3. In a large bowl, combine the chopped bell peppers, cucumbers, and green onions.
  4. Add the cooled soba noodles to the veggies and pour the dressing over the top. Toss gently until everything is evenly coated.
