- 8 oz rotini or penne pasta
- 1 cup halved cherry tomatoes
- 1 cup diced English cucumber
- 1 cup diced bell peppers (mixed colors)
- 1/2 cup thinly sliced red onion
- 1/2 cup Italian dressing (homemade or store-bought)
- 1/4 cup chopped fresh basil
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water until chilled.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and slice the red onion.
- In a large bowl, combine the cooled pasta with all vegetables and toss gently.
- Drizzle the Italian dressing over the salad mixture and stir to combine.
- Chill in the refrigerator for at least 30 minutes before serving to let flavors meld.
- Just before serving, garnish with fresh basil.
