- 1 cup full-fat coconut milk (240ml)
- 2 tbsp freshly squeezed lime juice
- 2 tbsp honey or agave syrup (adjust to taste)
- Fresh mint leaves for garnish
Instructions
- Gather all ingredients on your kitchen counter.
- Peel and dice the mangoes, discarding the pit.
- In a blender, combine the mango chunks, coconut milk, lime juice, and honey. Blend until smooth.
- Taste and adjust sweetness or tartness with more honey or lime juice if desired.
- Transfer to an airtight container and refrigerate for at least 2 hours.
- Serve chilled in bowls or glasses, garnished with fresh mint leaves.
