- 1 lb lean ground beef
- 2 cups penne pasta
- 1 oz ranch dressing mix (1 packet)
- 2 cups low-sodium chicken broth
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tbsp olive oil
Instructions
- In a large pot over medium heat, drizzle olive oil and brown the ground beef for 5-7 minutes. Drain excess grease.
- Add chopped onions and minced garlic; sauté for an additional 3-4 minutes until softened.
- Stir in penne pasta, chicken broth, and ranch dressing mix; combine thoroughly.
- Bring to a gentle boil, cover, and simmer on low for 15-20 minutes until pasta is tender and absorbs most of the broth.
- Remove from heat and stir in cheddar cheese until melted.
- Serve hot with extra cheese if desired.
