Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour and sugar; cut in cold butter until crumbly.
- Press the mixture into mini tartlet pans and prick each shell with a fork.
- Bake for 15 minutes or until lightly golden. Let cool completely.
- For the lemon curd, whisk fresh lemon juice, sugar, eggs, and zest in a saucepan over medium heat until thickened.
- Fill cooled tartlet shells with lemon curd and chill for at least one hour before serving.
