Instructions
- Rinse the rice under cold water until clear. Zest and juice the lemons.
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper; cook for 5 minutes on each side until golden brown.
- Reduce heat to medium-low, add garlic, and sauté for 1 minute until fragrant.
- Stir in lemon juice, zest, soy sauce, and chicken broth; bring to a gentle simmer.
- Add rinsed rice, stir well, cover, and simmer on low for about 15 minutes or until liquid is absorbed.
- Fluff the rice with a fork before serving; garnish with extra lemon zest if desired.
