- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1/2 cup freshly squeezed lemon juice
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix together flour and sugar; add melted butter and combine until crumbly. Press into the bottom of the prepared dish.
- Bake the crust for about 20 minutes until golden brown.
- In another bowl, whisk eggs, sugar, lemon juice, flour, and baking powder until smooth. Pour over the baked crust.
- Bake for an additional 25-30 minutes until set; edges should be slightly golden.
- Cool completely before slicing into squares and dusting with powdered sugar if desired.
