Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter; press firmly into the bottom of a pie pan.
- Bake the crust for 8-10 minutes until golden brown. Let cool completely.
- In another bowl, whisk together egg yolks, then add sweetened condensed milk and fresh lime juice until smooth.
- Pour the filling into the cooled crust; bake for 15-20 minutes until set but slightly jiggly in the center.
- Cool at room temperature for 30 minutes, then refrigerate for at least three hours before serving.
- Slice and serve topped with whipped cream or fresh lime slices.
