Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- Grate the zucchini, then squeeze out excess moisture using a clean dish towel.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
- In another bowl, mix eggs, vegetable oil, vanilla extract, and grated zucchini until smooth.
- Combine wet ingredients with dry ingredients, stirring gently until just combined.
- Fold in chocolate chips carefully.
- Fill muffin cups two-thirds full with batter and bake for 18-22 minutes or until a toothpick comes out clean.
