Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, beat eggs, oil, and vanilla until smooth.
- Fold shredded zucchini into the wet mixture.
- Combine both mixtures gently without overmixing.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
