Instructions

  2. Grate the zucchinis and press to remove excess moisture.

  4. In another bowl, beat eggs; then add vegetable oil and vanilla. Mix until combined.
  5. Fold grated zucchini into the wet mixture, then gently stir in dry ingredients until just combined.
