Instructions

- Grate the zucchini and squeeze out excess moisture.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs with vegetable oil and vanilla extract; fold in the grated zucchini.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Pour into the prepared pan and bake for 25-30 minutes until golden brown.
