Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy (about 3-5 minutes).
- Mix in the lemon zest and lemon juice until well combined.
- Gently fold in the flour and salt until just combined—don’t overmix!
- Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly golden yet soft in the center. Let cool on the pan before transferring to wire racks.
