Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Whisk together the cake flour, baking powder, and a pinch of salt in a bowl.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually combine the dry ingredients with milk until just mixed; avoid overmixing.
- Pour the batter into prepared pans and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Allow cakes to cool completely before whipping heavy cream with powdered sugar until stiff peaks form.
- Layer one cake on a serving plate, spread half of the whipped cream filling, top with the second cake layer, and finish with remaining filling and optional sprinkles.
