- 4 medium sweet potatoes (about 2 lbs)
- 2 tbsp unsalted butter
- 1/2 cup full-fat sour cream
- 2 tbsp light brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped chives or green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the sweet potatoes on a lined baking sheet for 45-60 minutes until fork-tender.
- Allow them to cool slightly, then slice in half lengthwise.
- Scoop out the flesh into a bowl, leaving some around the edges.
- Mix the potato flesh with butter, sour cream, brown sugar, cinnamon, salt, and pepper until smooth.
- Refill the potato skins with the mixture and bake again at 350°F (175°C) for about 20 minutes until heated through.
