Ingredients
- 8 oz sushi-grade tuna
- 1 cup white rice
- 1 ripe avocado
- ½ cucumber
- 2 green onions
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- Nori sheets (for garnish)
- Poke sauce (optional)
Instructions
- Rinse and cook the rice as per package instructions until fluffy.
- Slice the avocado into wedges and chop the cucumber into bite-sized pieces.
- In a bowl, mix soy sauce and sesame oil for the marinade.
- Dice the tuna into small cubes and coat with half of the marinade.
- In serving bowls, layer warm rice as a base and top with marinated tuna, avocado, cucumber, and green onions.
- Drizzle on remaining marinade and sprinkle with sesame seeds and nori strips.
