Instructions
- Brew the espresso and let it cool.
- In a bowl, whisk together the egg yolks and sugar until pale and fluffy. Gradually mix in the mascarpone until smooth.
- Quickly dip each ladyfinger in the cooled espresso, ensuring they remain firm.
- Layer half of the soaked ladyfingers in a serving dish, followed by half of the mascarpone mixture. Repeat to create a second layer.
- Dust cocoa powder over the top using a fine sieve. Chill for at least 4 hours or overnight.
